“Sangkhaya Fak Thong” ( สังขยาฟักทอง ) is a kind of custard made from coconut milk, eggs, palm sugar, pandan leaves, and a pinch of salt. This mixture is poured into a hollowed-out pumpkin and steamed over hot water. The dish is also known by the reversed name “Fak Thong Sangkhaya” ( สังขยาฟักทอง).
