Fried Green Mussels

“Pad Hoi Ga Phong” ( ผัดหอยกะพง ) consists of green mussels that are stir-fried together with garlic and soy sauce and then mixed with Thai Horapa basil. This wok dish is also found under the more general name “Pad Hoi Malaeng Poo” ( ผัดหอยแมลงภู่ ).

In the English edition of the book “Thailand - The Cookbook” the recipe refers to “Small Horse Mussels”, while in the German edition they are simply called “Miesmuscheln”. The “Small Horse Mussel” is called “Große Miesmuschel” or “Pferdemuschel” in German, which is a particularly large mussel species from the mussel family.
