Spicy Stir-Fried Seafood

“Pad Cha Talee” ( ผัดฉ่าทะเล ) is a wok dish with seafood based on a spicy paste made from garlic, chilis and galangal. The dish is seasoned with fingerroot, Thai basil, kaffir lime leaves and fresh green peppercorns as well as fish sauce, soy sauce and rice wine.

The second part of the name “Cha” describes the sound that the dish makes when stir-frying. Before it stands “Pad”, which means “stir-fry” and at the end “Talee” for the seafood. The whole thing can thus be translated as “Sizzling stir-fried seafood”.
