Laotian stew with beef

“Or Lam Nuea” ( เอาะหลามเนื้อ ) is actually a Laotian stew, but it is also widespread in Isaan in north-eastern Thailand. It is a beef soup thickened with crushed Thai eggplants and sticky rice.

It is prepared using a paste made from Thai eggplants, chilis, garlic, shallots and lemongrass. Other ingredients such as vegetables, bamboo shoots or mushrooms and “mai sakhaan”, a Laotian type of spice, are usually added. Or lam is then garnished with fresh herbs such as dill or coriander.

The dish is also known in Isaan as “Or Lam Seen” ( เอาะหลามเซิน ). Here, the Laotian term “Seen” (เซิน) is used for the beef.
