“Or Lam Nuea” (
เอาะหลามเนื้อ) is actually a Laotian stew, but it is also widespread in Isaan in north-eastern Thailand. It is a beef
soup thickened with crushed Thai eggplants and sticky rice.
It is prepared using a paste made from Thai eggplants, chillies, garlic, shallots and lemongrass. Other ingredients such as vegetables, bamboo shoots or
mushrooms and “mai sakhaan”, a Laotian type of spice, are usually added. Or lam is then garnished with fresh herbs such as dill or coriander.
