Ob Gai Asii Pian

“Ob Gai Asii Pian” ( อบไก่อสีเปียน ) is an aromatic chicken curry from the northern Thai province of Mae Hong Son. In the preparation of this Shan curry, the meat is first braised covered (“Ob”), which concentrates the flavors, and then continued cooking with the lid open until the oil returns (“Asii Pian”), creating an aromatic mixture of fat and herbs.
