“Nam Prik Normai Dong” (
น้ำพริกหน่อไม้ดอง) is a spicy dip made from cooked, pickled bamboo shoots, garlic, chilies and salt. All
ingredients are pounded together in a mortar. The garlic and chilies are grilled before pounding, which gives the dip a certain roasted aroma. Depending on the
recipe, minced meat can also be mixed into the dip. Whether with or without meat, it is typically eaten with raw vegetables and rice.
