Chilli Dip With Fermented Leafy Vegetables

“Nam Prik Nam Pak” ( น้ำพริกน้ำผัก ) is a northern Thai dip made from freshly fermented leafy vegetables, chilis, garlic and finely chopped meat or fish. This impresses with a robust mixture of salty, sour and spicy flavours. The dip is often served with fresh or steamed vegetables and sticky rice.

Depending on the recipe, it is a more or less dry dip. The name is composed of two parts: “Nam Prik” and “Nam Pak”. The former means “spicy dip” and the latter “pickled or fermented vegetables”.
