“Mok Gai” (
หมกไก่) refers to steamed chicken in Isaan. The meat is marinated in a paste made from lemongrass, kaffir lime leaves, coriander
roots, garlic, shallots and Thai chilis and then cooked over hot steam. Traditionally, the marinated meat is wrapped in a banana leaf. Depending on the recipe,
fresh herbs or vegetables such as banana blossom can also be mixed into the meat.
