Noodle Soup with Blood Tofu

“Kuai Tiao Nam Ngiao” ( ก๋วยเตี๋ยวน้ำเงี้ยว ) is a northern Thai noodle soup with beef or pork. Other important ingredients include tomatoes, dried chilies, thua nao khaep and blood tofu, which give the soup its characteristic spicy flavor. The origin of this dish is probably in the Shan State in neighboring Myanmar.
