“Krueang Gaeng Som” (
เครื่องแกงส้ม) is a paste for sour curries from central Thailand. It is prepared from dried chilis, white
pepper, shallots, garlic, fingerroot and shrimp paste. The paste gives curries a reddish color and pleasant heat. It is also called “Prik Gaeng Som”
(
พริกแกงส้ม) or “Nam Prik Gaeng Som” (
น้ำพริกแกงส้ม).
