Paste for Sour Curry from Southern Thailand

“Krueang Gaeng Som Pak Tai” ( เครื่องแกงส้มปักษ์ใต้ ) or also “Prik Gaeng Som Pak Tai” ( พริกแกงส้มปักษ์ใต้ ) refers to a southern Thai paste for sour curries. The paste is prepared from many fresh and dried chili peppers, turmeric roots, garlic and shrimp paste. It gives curries a yellow to orange color and extreme heat.
