“Khua Kling Plaa” (
คั่วกลิ้งปลา) is a dry curry from southern Thailand, prepared with chopped fish. The preparation is done by frying
the minced fish with a southern Thai curry paste and a large amount of chili peppers. At the end, the dish is usually sprinkled with finely chopped Kaffir lime
leaves, which provide a fresh contrast to the curry itself.
