Dry Curry with Pork

The southern Thai “Khua Kling Moo” ( คั่วกลิ้งหมู ) is a dry curry with chopped pork. The meat is stir-fried with a spicy curry paste and many chilies until it becomes quite dry. The addition of kaffir lime leaves rounds off the aroma at the end. The dish can also be found under the name “Gaeng Khua Kling Moo” ( แกงคั่วกลิ้งหมู ).
