Roasted rice powder

Khao khua" ( ข้าวคั่ว ) is the name given to roasted rice powder. For this, uncooked rice is roasted in a pan without oil together with various ingredients such as galangal, lemongrass or kaffir lime leaves and then pounded in a mortar. Glutinous rice is usually used for this, but other rice can be used. The resulting coarse-grained powder is used to season salads and other dishes.
