Khanom Krok

Small coconut pancakes as a snack

Khanom krok ( ขนมครก ) are small pancakes made from rice flour and coconut milk, which are baked in large iron pans with small, round indentations . This is usually done in two steps. First, the batter is baked to create a crispy base, and then the creamy, slightly sweetened coconut milk filling is added on top.

The pudding-like filling is often garnished with spring onions, dried prawns, corn kernels and pieces of pumpkin or taro. The real art in preparing khanom krok lies in harmoniously combining the sweet and savory flavours. Sometimes two khanom krok are combined and served as a small ball.
