“Khai Luk Koei” ( ไข่ลูกเขย ) are hard-boiled and then deep-fried eggs served with a thick sauce made from sugar, fish sauce, chilis and tamarind paste. The sauce is poured over the eggs and the dish is garnished with fried shallots, fresh coriander and chili strips.
