“Jin dup” (
จิ้นตุ๊บ
) is grilled beef or pork that is beaten into fibrous pieces with a hammer. The meat is often marinated before
grilling and then left on the grill for a very long time. If it is pork, the hammered meat is also known as “moo dup” (
หมูตุ๊บ
). This
preparation method from northern Thailand used to make it possible to eat meat that would otherwise have been too tough.
