“Hot pan” ( ฮ็อตแพน ) describes Thai dishes that are served on a very hot cast-iron plate or flat pan. The term is a loan word from English and is derived from “hot pan”. The sauce thickens due to the intense heating of the dishes. The food usually still sizzles when served.

This type of preparation is therefore not a classic or regional dish, but rather an urban food trend that has become particularly popular in Bangkok, Chiang Mai or tourist hotspots. Dishes of this type can also be found as “hot plates” ( ฮ็อตเพลท ).
