Hed Dong" ( เห็ดดอง ) refers to mushrooms that are marinated in a mixture of fish sauce and salt. After the mushrooms have been marinated for at least twelve hours, they are cooked and then mixed with Thai chillies, shallots and lime juice. Several different types of mushrooms are usually used for this. These mushrooms are often served with sticky rice or eaten like a salad.
