“Goong Chae Nam Plaa” (
กุ้งแช่น้ำปลา) is a Thai dish made from raw prawns marinated in a mixture of fish sauce, lime juice, garlic
and chilli. The acidity of the lime causes a so-called “denaturation” of certain proteins in the prawns, which is comparable to a very gentle cooking process.
The prawns are then served together with fresh herbs such as mint and coriander.
