Gai Pad Kha

Stir-fried chicken with galangal

“Gai Pad Kha” ( ไก่ผัดข่า ) is a southern Thai stir-fried dish in which chicken is sautéed with garlic, chilis and thin slices of galangal. The whole thing is deglazed with a mixture of oyster sauce, fish sauce and soya sauce. Depending on the recipe, the chilis and garlic can be made into a paste beforehand and turmeric added as an additional spice.
