“Gai Baan Thod Gluea” ( ไก่บ้านทอดเกลือ ) is a dish from northern Thailand where chicken pieces are marinated in a mixture of garlic, pepper, soy sauce, salt and other spices and then deep-fried. In the simplest case, the meat is simply rubbed with salt before frying.

In both variants, the meat becomes crispy on the outside and remains juicy on the inside. The marinade provides an intense flavour. The whole dish is usually served with a spicy dip and sticky rice. This dish is also known as “Gai Baan Thod Khem” ( ไก่บ้านทอดเค็ม ) or “Gai Mueang Khua Gluea” ( ไก่เมืองคั่วเกลือ ).
