Gaeng Om Moo (
แกงอ่อมหมู
) is a fairly clear soup from northeastern Thailand. The filling consists of pork and Thai aubergines or other
vegetables such as pumpkin. The soup is based on a paste made from garlic, chilis, shallots and lemongrass. It is spicier than the northern Thai variant of
Gaeng Om and is more similar to the Laotian stew
Or Lam, but is somewhat thinner than this because only a little Khao Khua is used for
thickening. To distinguish it from the northern Thai variant, the dish could also be called “Gaeng Om Moo Isaan”
(
แกงอ่อมหมูอีสาน
).
