Gaeng Khilek

“Gaeng Khilek” ( แกงขี้เหล็ก ) from central Thailand is a curry with coconut milk, whose main ingredient is the leaves of the cassia tree. These are also called “cassia leaves” and give the curry a bitter note. The curry is prepared with a red curry paste and can contain meat or seafood in addition to the leaves.

In contrast to this curry with coconut milk, there is also a soup with cassia leaves in Isaan that has the same name.
