Gaeng Khae

Soup with Wild Betel Pepper Leaf

“Gaeng Khae” ( แกงแค ) is a northern Thai soup based on a spice paste with a variety of herbs and a meat component. The name comes from the northern Thai term “Khae” for the wild betel pepper leaf, which is an important ingredient for the dish. Pork or chicken is usually used as meat, but there are also variants with water buffalo, beef, frogs or snails.
