“Chun Pia” (
ชุนเปี๊ยะ) is what a type of fried spring rolls wrapped in tofu skin are called in southern Thailand. The filling consists
of chopped pork, liver and crab meat and is seasoned with soy sauce, sesame oil, onions, sugar and, depending on the recipe, other ingredients. The dish came to
southern Thailand with Chinese immigrants, which explains the Teochew Chinese name of the dish.
